Four Seasons Hotel George V
Just off the Champs-Elysées, Four Seasons Hotel George V, Paris is superbly located in the heart of the most fashionable quarter of Paris. Fronting on Avenue George V, it is ideally situated near the business district and major tourist attractions.
The 244 rooms Hotel includes 59 suites. Classic French furnishings and Parisian style create an elegant residential atmosphere. The hotel’s 5 Michelin starred restaurants serve refined cuisine in an elegant and warm atmosphere.
We are looking for our Parisian property for an experienced and qualified Contrôleur des Coûts Restauration (M/F).
The candidate must hold the required authorization to work in a European country.
A fluent level of French and English are required.
Position based in Paris.
Preferred Qualifications and Skills
We are looking for individuals with exceptional interpersonal, organization, and communications skills. Someone who is able to successfully multi-task in a fast-pasted environment, is proactive, creative, and enjoys working in a team environment.
Essential Functions
1. Food and drink costs :
- Place daily orders in Birchstreet for all kitchens and other food orders for the outlets.
- Follow up on the delivery of food orders in collaboration with the kitchen.
- Reconcile food invoices on a weekly basis.
- Follow up monthly on open food orders in Birchstreet.
- Update and maintain order guides in Birchstreet.
- Follow up on price changes of ordered products for Kitchens and outlets.
- Assist the Project Manager & F&B Analyst in the elaboration of the weekly Food Cost and Beverage Cost Trends.
- Collaborate with Purchasing to establish general monthly food and beverage costs, including participation in monthly beverage inventories.
- Working with the Bar team to draw up technical sheets for cocktails.
- Ensure the update and maintenance of beverage references in Micros and to eradicate “open wine” in the different outlets.
2. Menu Engineering
- Establish in collaboration with the Kitchens the technical sheets.
- Updating all recipes in Birchstreet to ensure costing evolution.
- Assist the Project Manager & F&B Analyst.
- Establish the costing of the menus for all the restaurants and communicate them to the kitchen and dining room teams and to the Catering Management.
- Work with the restaurant’s front-of-house teams and the Catering Department on their engineering menu.
